Mash Potato Casserole (Freeze ahead!)
Mash potato casserole doesn’t seem like a saving grace, but if you’ve ever had company show up at your house last minute, the last thing you want to do is make a huge mess in your kitchen and race around frantically, ignoring your guests while you slave in the kitchen.
My solution... MASH POTATO CASSEROLE! Can you here the drum role in the back round? ;-)
This recipe comes from, Deena Kvasnik who is legendary around here for her gourmet food. Not only does she have a booming gourmet foods company, but she can make a meal that will knock your socks off! Deena reads cook books as a hobby and when her’s comes out, I guarantee you'll want to buy one!
Description: Imagine the creamy filling of a twice baked potato... with out the hulling, filling & broiling! These potatoes taste like heaven and they freeze beautifully!
Recipe: (This is the bulk recipe for easy freezing. *Cut down by one third for a one time serving.)
12 pounds potatoes
3 packages cream cheese (use farmers cheese if you want something more natural)
3 cups sour cream
3 tsp salt
1 tsp pepper (or pepper to taste)
3/4 c chives (optional, wait to add until serving)
1 1/2 tsp Paprika
3 Tbsp butter
3 cloves of garlic
Preparations:
1. Wash potatoes thoroughly (peeled or unpeeled to your liking)
2. Chop into bite size pieces
3. Boil until soft
** While Potatoes are boiling:
4. Sauté garlic in 3 Tbsp butter
5. Blend Cream Cheese, Sour Cream, Salt, Pepper, & Paprika, then add Garlic
6. Drain potatoes & combine ingredients
7. Mash potatoes to desired thickness (I prefer a stand up kitchen aid mixer)
Once everything is blended nicely, Store in Ziplock Freezer Bags & label for storage.

Freezer tips:
1. Take a Ziploc bag and put it inside of a large measuring cup, folding the zipper over the edge. Use a sturdy spatula to scoop potatoes out of bowl and into the bag.
Once full, zip most of the way closed, squeeze out excess air and lay flat on a cookie sheet. Put in freezer until solid or set it outside in freezing weather. This makes the side dish super thin and stackable, great for long-term storage in an overcrowded freezer!
Cutting Corners:
Swap out sautéed garlic for garlic powder
Health Nut Up Grade:
- Substitute Farmers Cheese for Processed Cream Cheese or make your own “cream cheese by straining the whey protein off your yogurt. I’ve had good success with OLD HOME ALL NATURAL plain yogurt. Comment if you need the instructions for straining yogurt.
