I'm Nuts for Pumpkin Bread!

A cold day is a great day to make pumpkin bread, but this pumpkin bread "takes the cake!" I guess what I'm trying to say, is who needs cake with BREAD THIS GOOD.

I'm always trying to find a great way to SAVE TIME!

I need something my kiddos can grab on the go when they get hungry. Breakfast is an especially rushed time of day. My solution to this is a great breakfast bread that I can serve up with a healthy dose of coconut oil or raw butter.
- Good fats (like coconut oil) can power your day and keep hunger away. Coconut oil is an immediate source of energy that nourishes on a cellular level.

I adapted this recipe from my dear friend, Jenny Kelly.

2 cups  roasted pumpkin (or a 15 oz can)
1 cup apple sauce (Substitute: coconut oil, olive oil or vegatable oil or ANY combination in a pinch)
4 eggs
2 cups sugar

3 &1/2 cups flour
2 tsps baking sota
2 tsps salt
1 & 1/2 tsp pumpkin pie spice
1 tsp cinnamon
1 tsp nutmeg
2/3 cup water
1 cup pecans
1 cup walnuts
1 cup coconut
1 tsp vanilla
1/2 tsp almond extract

Procedure:
1. Mix sugar, eggs, & apple sauce
2. Add pumpkin
3. Add remaining dry ingredients and finally water
4. Pour into 3 9x5" loaf pans ( or 1 small &2 large loaf pans)
     *well greased or use a parchment paper for easy lifting!
5. Bake at 350 degrees for 1 hour. Check with a tooth pick at 45 minutes.

  1. Feel free to omit the nuts & coconut if that's not your thing...

    I PURPOSEFULLY at texture to help my kids acclimate to TEXTURE! It's one strategy of avoiding picky eaters :-) You can also increase the sugar up to one cup if you desire a more traditional sweet bread.

    I've also found that almond flour, up to 1 cup is a great substitute for added protein. One the down side, it raises your calories, on the up side, it makes the bread very rich & super moist.

  3. You're awesome Heidi! I actually ran out of parchment paper, so I used a butter wrapper. It wasn't my first choice but very "green." I recycled my butter wrapper! How's that for thrifty!
